We carefully select the largest and highest quality mussels from the rafts of the Galician estuaries. They are always protected under the Protected Designation of Origin Mussels of Galicia which guarantees their origin, quality and extraction with environmentally friendly fishing methods. 

This particular "vine" vinegar is extracted directly from the barrel, without undergoing subsequent treatments, so sediments may appear as a result of its aging in oak.
