Description:
Cair Selección La Aguilera is a barrel-aged red wine made by Dominio de Cair in the D.O. Ribera de Duero (Castilla y León) with the red Tempranillo variety.
Dominio de Cair is the project of the prestigious Luis Cañas wine family in the D.O. the Ribera del Duero. A new challenge that began in 2008 from century-old limited production vines that are vinified in state-of-the-art, avant-garde facilities.
Cair Selección La Aguilera is born in its own vineyards located in the Burgos town of La Aguilera. They are vines more than 45 years old planted at 800 meters above sea level. The soils are poor compounds of clay, limestone, sand and gravel and traditional agriculture is practiced, limiting production. The harvest is manual in small 11 kg boxes with perforations to achieve good ventilation.
In the winery, the Cair Selección La Aguilera grapes remain in a refrigerator at 5ºC. They then go through a double table selection of clusters and grains and only those that are in perfect condition ferment in stainless steel tanks at a controlled temperature. Then it ages for 14 months in French and American oak barrels, 50% new barrels and 50% second wine barrels. Finally, the wine is bottled and rests for a minimum of 12 months before being marketed.
Being the result of the experience of Rioja native Luis Cañas in Castilian-Leonese soils, Cair Selección La Aguilera is a wine that comes from a small district of Aranda de Duero (Castilla y León) and that stands out for its power in balance.
