They are always protected under the Protected Designation of Origin Mejillón de Galicia (Galician Mussel), which guarantees their origin, quality, and harvesting using environmentally friendly fishing methods....

Sourced from the Galician Rías (Ensis siliqua), it is purchased during the months of May and June. After 24 hours, at a purification plant, it is cooked and peeled by hand.
