YEARN SALT
The salt comes from the Añana Salt Valley, in Álava, an inland salt mine that takes advantage of four salt water springs that spring up in the highest part of the valley. Salt exploitation has been carried out for more than seven millennia, making it the oldest active salt mine in the world.
The salt production season varies each year depending on weather conditions. It generally begins in May and ends in September. Starting this month, the long nights delay the evaporation process and the continuous rains spoil the scarce salt obtained.
PAQUIBATO COCOA
The cocoa is produced by the Paquibato farmers cooperative in the Davao region. In 2019, during the Paris Chocolate Show, the beans grown by Jose Saguban, a member of the cooperative, were recognized with the "Cocoa of Excellence" as one of the 20 best cocoa beans in the world.
