AÑANA SALT
The salt comes from the Añana Salt Valley in Álava, an inland salt mine that uses four saltwater springs that spring up in the highest part of the valley. Salt has been mined for more than seven millennia, making it the oldest active salt mine in the world.
The salt-making season varies each year depending on the weather conditions. It generally begins in May and ends in September. From this month onwards, the long nights delay the evaporation process and the continuous rains spoil the little salt that is obtained.
PAQUIBATO COCOA
The cocoa is produced by the Paquibato farmers' cooperative in the Davao region. In 2019, during the Paris Chocolate Show, the beans grown by Jose Saguban, a member of the cooperative, were recognized with the "Cocoa of Excellence" as one of the 20 best cocoa beans in the world.
