Description:
Nose: Mineral and complex aromas of fine lees.
Pairing: Very versatile. Ideal with seafood and unctuous cheeses.
Harvest: Manual harvest. Selection of grapes in the vineyard.
Vinification: The must ferments spontaneously in a stainless steel tank.
Aging: It is racked after fermentation, separating it from its thick lees and remaining on its fine lees for 24 months without stirring.
