Description: 

Valdesil is a white wine from the D.O. Valdeorras made by the Valdesil winery. 

The winery is located in Villamartín de Valdeorras (Orense). 

Valdesil is made from the Godello variety. The grapes come from a selection of small farms with 30-year-old vineyards located at about 500m altitude and planted on slate slopes. 

The harvest is carried out completely manually and is quickly transported to the winery where the grapes undergo careful selection on the table. 

For its production, with the grapes already in the winery, first a brief film maceration and static racking are carried out. Fermentation is done with native yeasts in stainless steel tanks. 

In the same fermentation tanks, Valdesil undergoes a brief aging of 5 months with its lees. During this process, through periodic battonage, what is known as autolysis occurs, the rupture of the yeast cell wall that will give creaminess, density and greater structure to the wine.
