Pago de Carraovejas Cuesta de las Liebres is a red wine produced by the Pago de Carraovejas winery in Peñafiel, D.O. Ribera del Duero.
Pago de Carraovejas is a winery founded by José María Ruiz, producing its first harvest in 1991.
The Carraovejas estate, with more than 200 hectares of vineyards, is located on the outskirts of Peñafiel, one of the towns with the most wine-growing tradition in the Ribera del Duero, where we find limestone loam soils with red clay.
In this area the climate is oceanic, with low rainfall and very cold in the long, humid winters in which temperatures reach -10ºC. Summers are very short and very hot, reaching temperatures of up to 40ºC, although nights and mornings are usually cool.
Pago de Carraovejas makes a tireless effort every year to reach levels of excellence in each and every one of the production processes, in this way it has managed to position itself as one of the best wineries in Ribera del Duero and in all of Spain.
Pago de Carraovejas Cuesta de las Liebres is a wine made with Tinto Fino from the La Cuesta de las Liebres vineyard located on a steep slope on limestone marl soils with outcrops of gypsum and calcareous salts. A wine of extreme viticulture that is only made in exceptional vintages.
The harvest is manual in small boxes, with a first selection in the vineyard. Once in the winery, it passes through the selection table to the cold room. All movements in the winery are carried out using gravity. Alcoholic and malolactic fermentation takes place in small wooden vats with native yeasts. For 24 months it remains in extra-fine grain French oak barrels.
