They cultivate 30 hectares of organic vineyards, the main variety planted is Tempranillo with other local varieties such as Bobal, Garnacha and Albillo on clay-sandy-rocky soils depending on the plot.
Pícaro del Águila is made from vineyards between 35-60 years old, on sandy-clay soils and at an altitude of 900 meters. The main variety is Tempranillo, with some strains of Albillo, Bobal and Garnacha.
Fermentation is carried out by all the varieties together with a long maceration, it is pressed with feet and aged in French oak barrels.
