Lacima is a red wine from the D.O. Ribeira Sacra made by Dominio Do Bibei, a winery that was born in the early 2000s by a group of people deeply rooted in those lands.
The climate in this area is Atlantic, characterized by a large thermal oscillation between seasons.
This wine is a blend of Mencía (90%) and 10% of other red varieties: Branmcellao, Mouratón, Souson and Garnacha. The grapes come from vineyards between 50 and 100 years old located at an altitude of between 300 and 700 meters. The vineyards are planted on different types of soil: slate, clay and granite.
The harvest is carried out manually in 10 kg boxes. After manual selection of the grapes and destemming, a 2-day pre-fermentation maceration is carried out, fermentation in open 500-liter French oak barrels and, subsequently, fermentation. malolactic in 300 liter barrels.
Finally, Lacima spends 19 months in French barrels and 16 months in the bottle.
