Description:
Manual harvest in boxes, with a first bunch selection in the field. The Grenache was harvested 15 days later.
The grapes are transported refrigerated to the winery to maintain all their integrity. After a second sieve on the optical selection table, alcoholic fermentation (at 27ºC) and malolactic fermentation are carried out naturally.
Always aged in own-made American oak. 36 months for Tempranillo and 30 for Garnacha to avoid oxidation.
20% is new oak and the rest is from 3 wines. Five traditional rackings were carried out from barrel to barrel by candlelight to manually separate the sediments and avoid aggressive filtering.
