APPLIED TREATMENTS: Salted, dried and cured maturation. 

 

PRODUCT CHARACTERISTICS: 

 

Colour: Purple red in the lean part and bright in the fatty part. 

Homogeneous when cut. 

Smell: Characteristic of a cured product. 

Flavour: Delicate, slightly salty, pleasant, without abnormal flavours. 

Texture: Consistent, slightly fibrous, without softening.
