    Amontillado is a very unique wine, since it combines the aging under a veil of flor, typical of Fino and Manzanilla, with a later period in which the veil of flor disappears and the wine is exposed to oxidation. 

     

    Made with palomino grapes, this fusion of aging makes Amontillados wines extraordinarily complex and interesting. It belongs to Sherry wines.

    Description: 

     

    The NPU Amontillado Reserva Especial wine is dry, smooth and with a radiant amber color. Its lasting aroma is reminiscent of hazelnuts. It is obtained from a fine wine that has subsequently undergone another aging process, now without flower. This complex aging offers one of the best sherry wines, ideal to accompany menu starters, especially in dishes seasoned with vinegar. 

     

    Coming from the complete fermentation of Palomino grape musts, Amontillado is a unique wine, the result of the fusion of two types of aging, biological and oxidative, which makes Amontillados wines extraordinarily complex and interesting. 

     

    Its particular aging process begins, as in the case of Finos and Manzanillas, with an initial phase under a veil of flor; Throughout the first years in the criaderas, the wine acquires pungent notes and accentuates its dry palate. From a certain point on, the disappearance of the flower causes a second phase of oxidative aging, which will gradually darken the wine and give it concentration and complexity. 

     

    View: Dark amber, transparent, vivid 

     

    Nose: Fine old, sharp, harmonious, oaky, very old 

     

    Taste: Dry, deep, old age, persistent, old 

     

    Gastronomy: Appetizer, cured ham, grilled meats, old cheeses, nuts

    There is a wide range of Amontillados, depending on the balance between the two aging phases through which this wine is made: biological and oxidative. Thus, some Amontillados have a paler color and present very sharp notes and many hints of yeast, due to having been aged longer with flor. In others, however, notes of oxidative aging, spices and wood predominate. 

     

    Service and consumption: This wine, of exquisite complexity, is capable of succeeding in multiple areas, providing its personal touch to a wide variety of dishes - smoked dishes, cured cheeses, white meats, oily fish, spicy dishes. 

     

    As a companion to certain vegetables such as asparagus and artichokes, it gives us sublime moments.
