A very rare and old Amontillado from our own 5-barrel sacristy. Made with unfortified Pedro Ximénez from the San Roque estate in the Sierra de Montilla. Aged for over 30 years in a static tank.

Description:
Visual Phase: Intense amber color. Unfiltered.
Nose Phase: Extreme intensity of multi-layered complexity based on a coexistence of biological and oxidative nuances. Bitter almonds, yeasts, herbs, and toasted nuts.
Tasting Phase: Dry palate, with a lean body and a high degree of alcohol and acidity in balance due to its long aging period. Very long finish with a nutty aftertaste.
