Description:
Albariño from the trellises of the upper area of the Pazo. A very careful preparation that has as its protagonist the excellent quality of the Pazo de Rubianes grapes. Collected and selected manually in 15 kg boxes, the grapes are processed in the winery in less than 3 hours after being harvested.
After cold maceration, fermentation takes place in stainless steel tanks at a controlled temperature. Once the fermentation is finished, it is aged on lees with its corresponding 'bâtonnage' to finish with cold stabilization and subsequent bottling.
