Description:
Fermentation in vertically open barrels of 1,800 and 700 liters capacity with 100% stems and native yeasts. The paste is removed with the traditional method twice a day. 'Délestage' and start of malolactic fermentation.
Aged for approximately 12 months in 500-liter French oak barrels.
