After a long and careful path, once we have obtained the fruit, exclusively from our farms, our mission has only just begun...we began to make Isbilya:
Olive harvesting in mid-October. This results in an increase in fruitiness (an organoleptic characteristic in the tasting that is reminiscent of healthy, fresh olives). It entails loss of production, due to the decrease in the fat yield of the fruit.
Collection in the least hot hours of the day. It allows the olives to be kept at a low temperature, in order to achieve an authentic cold extraction (22ºC), obtaining an exponential olive elixir.
Collection by riding machine. Thanks to this system we can harvest our entire plantation in a single day, achieving maximum homogeneity in our oils.
We only collect flying olives (on the tree) and positioned in the upper 3/4 parts of the tree where the fruits that will produce the highest quality oil are found.
Grinding is done in less than two hours from harvesting.
