    Description: 

    PICUAL VARIETY 

    It has a high oil yield (up to 27%), a high stability index, and a high oleic acid content. It also offers high resistance to rancidity due to its high content of natural antioxidants. Its high polyphenol content makes it the most stable olive oil available. 

    From an organoleptic point of view, a distinction should be made between lowland and mountain olives. Lowland olive oils are full-bodied, typically bitter, with a woody flavor. Mountain olive oils tend to be milder, though with a fresh and pleasant flavor. 

    CHARACTERISTICS: It is the richest in oleic acid, which is associated with a reduced risk of cardiovascular and liver diseases. Excellent fatty acid composition, as well as a high quantity of natural antioxidants. 

    FLAVOR: Powerful and full-bodied. Flavor with notes of wood, banana, and freshly cut grass. It has a slightly bitter and spicy flavor, giving it great character. AROMA: Herbaceous and fruity, with prominent notes of green banana, almond, and green tomato. 

    HOJIBLANCA VARIETY: This variety has a very balanced fatty acid composition with relatively lower saturated fatty acids than other varieties. Its stability against oxidation is not high, and it is recommended to keep these oils protected from light and excessive oxygenation during storage. 

    From an organoleptic point of view, they present a wide range of flavors, although vegetal flavors predominate. Common attributes include sweetness at the beginning of tasting, a fruity aroma of fresh grass, a slight bitterness of green fruit and other fruits that sometimes evoke a fruit salad, a slight peppery sensation in the throat, and an almondy aftertaste. 

    CHARACTERISTICS: Known as Lucentino due to the metallic sheen of its leaves when the sun shines on them. 

    FLAVOR: Predominantly vegetal flavor with sweet notes at the beginning of tasting. A slight tingle in the throat and a final almond aftertaste. 

    AROMA: Fresh fruit, freshly cut grass, white flowers. 

    PICUDO VARIETY 

    The organoleptic characteristics of the Picudo variety are excellent, with unbeatable balance and sweetness, without harsh flavors. Occasionally, subtle flavors and aromas reminiscent of exotic fruits, as well as apple and almond, can be found. 

    CHARACTERISTICS: Sweet and balanced, fruity with many nuances, producing very authentic sensations on the palate. 

    FLAVOR: Slightly bitter, ranging from intense fruitiness to mild sweetness. 

    AROMA: Exotic fruits, tomato, apple, or even almond.
