On the other hand, the amount of oil obtained from early olives is much less than from mature ones.
They have also been recognized in competitions that reward the best oils in the world. Therefore, to make 1L of Artajo 10, about 10 kg of olives are needed.
Its use is recommended raw, to finish dishes, season or enjoy it on toasted bread. Each variety has its own particularity in aroma and flavor, so some pairings with other products are suggested.
