This Belegen is a cheese made from pasteurized goat's milk and vegetable rennet, cylindrical in shape and with a pronounced convex heel. Its white skin, treated in the Gouda style, maintains the homogeneous paste during the maturation process, on wooden planks. Versatile, balanced and sweet, smell and aromas of medium intensity and with varied and subtle lactic registers. Upon reaching the desired maturation, the paste becomes firm and silky, a pleasant contrast between its melting character and those small nuances of crystallization that appear when tasting, making it a desired and addictive cheese.

From the fields of the Noord Brabant region, in northern Holland, our Gouda-type pieces of Saanen goat are selected at origin, our belegen are made with excellent raw materials and refined until they reach their maximum expression and organoleptic plenitude.
