Description:
'Palo Cortado' is a wine halfway between Oloroso and Amontillado, it is the great icon of Jerez wine and 'Regente', from Bodegas Sánchez Romate, is one of the best young Palos Cortados, understanding that relative youth in about 15 years of average upbringing. Wine of great complexity that combines the aromatic delicacy of Amontillado and the corpulence on the palate of Oloroso.
Characteristics
From chestnut to mahogany in color, its aroma presents a great variety of nuances, harmoniously combining the characteristic notes of amontillados and Oloroso with other citrus notes, reminiscent of bitter orange, and lactic notes, like fermented butter. Its palate is at the same time round, deep and voluminous, presenting the aromatic notes in the aftertaste with a soft and delicate expression, in a pleasant and long-lasting finish.
The Palomino Fino variety offers us this fragrant Palo Cortado with golden amber reflections. The aromas of wood, almonds and walnuts, along with its spicy softness in the mouth, make it ideal to combine with cheese, nuts and Iberian ham. It is fine, elegant, seductive, and with a very delicate palate. It is perfect if you want to start getting into the world of sherry and Palo Cortado.
Preparation and Aging
These are wines from extremely fine palomino musts, initially fortified at 15% vol. and identified with a "stick" or oblique stripe. At the end of the surtabla phase, the confirmation by the tasters of the existence of certain very specific characteristics in some of the boots in which the grain veil has been maintained, will determine their classification as potential Palos Cortados (which is illustrated on the boots with a horizontal stripe that cuts the original "stick").
The wine is again headed above 17% vol. thus redirecting towards an oxidative aging process.

In the past, when the wines were settled in the botas as they call the barrels in Jerez, they were classified with a line if they were considered suitable for fine and the degree of alcoholization was indicated; If the characteristics of the wine opted for Oloroso, they were marked with two lines and alcoholized at 18º. In the first case, biological aging was carried out and in the second, oxidative aging.
If the foremen saw different characteristics in the barrel provided by the butts or the grapes, and here lies the mystery since the resulting wine was neither fine nor fragrant, to distinguish it they marked it with a transverse stripe on the first stem and from there The name comes from Palo Cortado, which has characteristics of Oloroso and Amontillado, which gives it a very own and unique personality and style.
