Description:
30 Copelos is a plurivarietal red wine under the Ribeiro designation of origin. Made by winegrower José Merens, owner of the Lagar de Merens winery, located in Arnoia (Ourense).
Its production begins with a hand harvest in boxes. Once all the grapes have been collected, they are taken to the winery. Where they make a selection and destem grain by grain. Once this entire process is finished, they are placed whole in French oak barrels for cold maceration for 24-48 hours after collection at a temperature of 7-9ºC. Fermentation lasts between 21 and 30 days. Until it is devatted, the paste passes into French, Hungarian and American oak barrels, which will subsequently undergo a second malolactic fermentation. Finally, they remain there with their fine lees depending on the age of the barrels, they are between 6 and 9 months. Once this time has passed, the wine is bottled and finally, it is left to rest for 4 months in bottle racks before being marketed.
The 30 Copelos wine is a multivarietal wine, as we have mentioned before, and has the following variant: Sousón 40%, Caíño 30%, Ferrón 20% and Garnacha 10%. The tannins give the sensation of solidity but without edges, with a magnificent structure that gives it a marked personality.
