Abade de Couto is a wine with an intense garnet color with a violet rim and a high layer.
It has a good intensity on the nose, with aromas of cherry, plum and red berries, all wrapped in notes of caramel, toffee, vanilla and cocoa with a background of light spicy nuances.

Description:
Manual harvest and preselection of the Sousón, Brancellao and Caíño tinto varieties from our highest altitude estate in the O Rosal valley, Figueiró, with mineral soils, dominated by metamorphic shale.
Grape selection table, total destemming and very gentle crushing of the grapes. Cold premaceration at 12ºC and traditional controlled fermentation at 21ºC. Daily open pumping with the purpose of oxygenating and extracting color. Subsequent cooling to 17-18ºC to avoid malolactic acid and thus be able to micro-oxygenate gently and continuously. Finally malolactic fermentation in French oak barrels.
Bottling and resting for 2 months in the bottle prior to distribution.
