Néboa Cheese is a Galician raw cow's milk cheese refined in the winery, made by Ganadería Quintián.
This delicious cheese is made with milk from Quintián's own livestock, a livestock farm located in the province of Lugo.
With their fresh raw milk they make this soft cheese.
Néboa, rectangular in shape, is covered by a moldy bark that forms naturally.
Its name refers to the fog so characteristic of the area during most of the year.
And precisely this moldy white bark also evokes that fog of the place.
It is an artisan cheese, molded and turned one by one by hand, with all the love that a piece like this needs.

Description:
Chelo and Julio are lifelong ranchers, owners of a livestock farm (Ganderia Quintián) in the O Páramo region, province of Lugo, who distribute their daily fresh milk throughout Spain. In 2015 they began to build the cheese factory, on the side of a mountain and half buried. Advised by José Luis Martín, they designed an underground cellar with a stone wall through which water emanates naturally, achieving an optimal degree of humidity, which gives the cheeses a very special character. Néboa, in Galician, means fog and this cheese is a tribute to the characteristic climate of this land.
