Description:
The grapes are selected in the vineyard itself and hand-picked in 12 kilo boxes. After passing through the selection table, the clusters are destemmed at low revolutions to later enter the tanks by gravity. Fermentation takes place at a controlled temperature of between 20º and 24ºC for 9 to 12 days. For aging, the delicacy of Rioja wine requires a careful selection of barrels that provide elegance and respect its finesse, which is why French oak and a small percentage of American oak are used for the second phase of aging, working only with two cooperages. of this type of oak: Surtep and Seguin Moreau.
