Description:
Pazo Señorans Selección de Añada is a white wine made in the D.O. Rias Baixas by the Pazo Señorans winery. It is possibly one of the best wines made from the Albariño variety.
The grapes used to make Pazo Señorans Selección de Añada come from old vines over 45 years old planted on vine, so that the plant is protected from soil moisture and with a large surface area of leaves exposed to the sun.
The vineyard is planted about 300 meters above sea level, on sandy soils poor in granite decomposition. The climate is an Atlantic climate, with mild temperatures and abundant rainfall.
The harvest is carried out manually, in small plastic boxes that ensure the perfect condition of the grapes upon arrival at the winery.
A skin maceration of the grapes is carried out to extract all the aroma, before fermentation, which takes place in stainless steel tanks at a controlled temperature of 18ºC.
Once fermentation is complete, Pazo Señorans Selección de Añada is aged in stainless steel tanks for 30 months on its own lees. Once bottled, it will rest and refine for a minimum of 12 months before going on the market.
A wonderful Albariño, ready to consume now or to store for the next 5 years in which it will evolve in a very positive way.
