Clean, high-intensity nose with notes of white fruit, bitter almonds, fennel, saline notes, and nuts. Yeast notes from the organic aging process are clearly predominant. 

On the palate, it is dry, with medium acidity, high alcohol, and medium body. The flavor intensity is high, with hints of white fruit, bitter almonds, light toast, and yeast. The finish is medium-long with an umami character.
