Los Peperetes' preserved cockles in brine are the result of a meticulous selection of the best meats caught manually by shellfish gatherers from the Galician estuaries, only between September and November, when they are at their best in terms of flavour and size. This makes them one of the best preserved cockles on the market and our most iconic product.
Once we receive the fresh cockles in our workshop, we subject them to a natural purification process in seawater pools. Our expert packers handle them with care, classifying them by size and placing them in cans, one by one, by hand, resulting in an impeccable presentation.
