Elaboration: Early harvest, short skin maceration, racking prior to fermentation at controlled temperature in ceramic CLAYVERS where it remains for more than 6 months in storage, during which time frequent bantonages are made seeking the complexity of the yeast lees.
Tasting notes: with intense green reflections, powerful, fresh and citrus aromas, the minerality of the terroir is appreciated in the mouth, very balanced and elegant.
Pairing: Grilled or pan-fried fish, also white meats, such as chicken or turkey, fresh and creamy cheeses, ideally goat and brie.

Description:
Viticulture within the Ribeira Sacra is based
on different pillars that make it heroic.
In this line of wines, we can talk about early harvests seeking the maximum
expression of the fruit in each of the versions. Being plots located at latitude 42 facing north, they express wines with fresh and attractive colors, a lot of
aromatic complexity, an acidity typical of the Galicia region. In the mouth, they are soft, fresh and persistent wines of trend for new demanding consumers
who seek to discover typicity and elegance. 42 north reflects this profile to
satisfy a modern and current need for wines.
