ROI&Co oysters are selected by hand, one by one and in a sustainable way by our shellfish collectors in the best rafts of the Arousa Estuary, seeking excellence in quality, size and respect for the species and the environment. 

Our oysters are caught exclusively in the best rafts of the Arousa Estuary only when nature allows us to and exclusively when the oyster is at its best point of growth and size. 

At ROI&Co our shellfish is prepared, cooked and prepared by hand, can by can in very small quantities. Slowly, pampering every detail by expert hands with decades of knowledge in the artisanal preparation of gourmet Galician preserves. Only by following the traditional family recipe of Roi (Restaurante Punta Cabalo, beacon of A Illa de Arousa) is how we achieve an unrepeatable and unmatched flavor of our preserved oysters. We never subject our product to automated industrial processes of any kind and we do not use any type of preservative or added ingredient other than the natural and traditional ones in the recipe.
