Description:
Product made from the muscle bundle formed by the spinal and semi-spinalis muscles of the thorax, as well as the longissimus, lumbar and thoracic muscles of the pig, practically free of external fat, aponeurosis and tendons, marinated and stuffed in an artificial casing (calibre 70/85), which has undergone an appropriate curing-maturing process. It has streaks of infiltrated fat when cut, derived from its quality and origin.
INGREDIENTS: 100% Iberian acorn-fed loin, salt, artificial collagen casing, paprika, sugar, antioxidant (E-301), preservatives (E-252, E-250), acidity regulator (E-331iii) and spices.
APPLIED TREATMENTS: Addition of ingredients and kneading, settling in refrigeration, stuffing,
drying and maturing.
PRODUCT CHARACTERISTICS:
Color: Pinkish to red, without abnormal colorants, it has a marbled appearance due to the infiltrated fat.
Smell: Characteristic.
Taste: Characteristic.
Texture: Consistent, completely bound and compact mass.
