Description:
BISQATO is an artisanal dairy workshop that was born in a small village in Labrada called Xiros, in Guitiriz.
Biscato is a Galician word that means "small portion of something." And that is what it aims to be, a grain of sand to add value to a product as important in Galicia as milk.
The entire process is done by hand. The cheeses are molded, turned and wrapped one by one, with care and the utmost care.
They are based on high-quality raw material that comes from a farm next to the cheese factory, where the cows graze freely in a rotational grazing regime throughout the year, taking advantage of the area's own resources.
