Description:
100% Iberian acorn-fed loin
Product made from the muscle bundle formed by the spinal and semi-spinal muscles of the thorax, as well as the longissimus, lumbar and thoracic muscles of the pig, practically free of external fat, aponeurosis and tendons, marinated and stuffed in an artificial casing (calibre 70/85), which has undergone an appropriate curing-maturing process. It has streaks of infiltrated fat when cut, derived from its quality and origin.
INGREDIENTS: 100% Iberian acorn-fed loin, salt, artificial collagen casing, paprika, sugar, antioxidant (E-301), preservatives (E-252, E-250), acidity regulator (E-331iii) and spices.
APPLIED TREATMENTS: Addition of ingredients and kneading, refrigeration settling, stuffing,
drying and maturing.
PRODUCT CHARACTERISTICS:
Colour: Pinkish to red, without abnormal colouring, it has a marbled appearance due to the infiltrated fat.

Texture: Consistent, fully bound and compact mass.
